Penne Chicken and Mushroom Arrabbiata

I love cooking and I love pasta so much. I usually cook pasta every other weekend just to satisfy my cravings.

Penne Arrabbiata is one of my favourite dishes I usually order in a restaurant and I thought before that doing it at home is difficult. But when I did it myself, it only requires such few ingredients!

I am not a chef or a great cook but just someone who loves cooking as a hobby and I want to share the recipes I like doing.

1 400g bottle arrabbiata sauce (Barilla or Maggi)
1 400g pack penne pasta (can be changed to other types of pasta you prefer)
300g chicken breast, 1-inch cubes
1 400g can sliced mushrooms
4 tsp olive oil
3-4 cloves garlic, minced
1 small size onion, finely chopped
1 medium to large size tomato, diced
Chilli flakes, optional
Salt and pepper to taste

1. Cook the penne pasta as per package instructions. Drain and set aside.

2. In a medium-size skillet, add olive oil and sear chicken until it colours or golden brown. Set aside.

3. On the same skillet over medium heat, saute garlic, onion and tomato. Add mushrooms and chicken. Add the arrabbiata sauce and let it simmer for around 2 minutes. Add salt and pepper to taste. Add chilli flakes for additional spice.

4. You can mix the penne pasta onto the sauce or serve it separately. Makes 4-6 servings.

~ Edith Lovejoy Pierce

I would say 2019 was the harshest year I have ever encountered all my life, next was 2018. It made me almost pinned to the ground and very depressed because of two consecutive years of trials and challenges. It made me feel so unworthy, selfish, ugly, worthless – all negative things you can think about, I have felt it. Continue reading Goodbye 2019, Hello 2020!

The Dubai Frame

We had the opportunity to travel to the UAE, particularly Dubai last September 2019. My eldest sister who is on a family visit in Qatar had to renew her visa and needed to exit in order for us to process her renewal. The nearest and best place for her to go was in Dubai where our only brother works for the past 13 years. Of course, I and Sky had to tag along so we can enjoy this family time even for a short period.
